Heirloom Tomato Mosaic
Fresh Mozzarella and Petite Garden Herbs
Don’t let the mosaic pattern intimidate you from trying this fresh and colorful dish. Feel free to mimic the presentation as shown in the photo by cutting each vegetable into flat squares and arranging them into the pattern shown.
Serves 6 / Total Time:
- Cut the red and yellow tomatoes and avocadoes into ¾ inch cubes.
- Cut the cherry tomatoes and the mozzarella bocconcini in half.
- Arrange the tomatoes, avocados, and mozzarella in a random mosaic pattern on a serving plate.
- Drizzle with olive oil, balsamic vinegar, season with sea salt, black pepper and garnish with herbs and fresh flowers.
To prevent the avocado slices from sticking and turning brown, place the slices into a bowl of cold water and the juice of half a lemon until assembly.
