It’s best to eat Brussels Sprouts in season, which is from October through March, when they have a sweet cabbage flavor. Once the weather turns warm they become more bitter and sharp.

Serves 6 / Prep Time:


  1. Preheat oven to 350°F.
  2. Combine the bacon and oil on a rimmed baking sheet and bake until the bacon is crisp on the outside and tender in the center, about 10 minutes.
  3. Combine the brussels sprouts, sage, salt, and pepper in a large mixing bowl. Add the bacon and oil and stir to thoroughly combine.
  4. Spread on the same baking tray, return to the oven, and roast until the Brussels sprouts are tender, about 20 minutes.
  5. Transfer to a serving bowl and serve immediately.
