systemized approach to tasting and teach you how to analyze and describe a wine’s

Our Silver Wine & Food Pairing gives you the opportunity to use your senses to experience delicious bites with our Silver Oak and Twomey wines. Chef Dominic uses local ingredients, including herbs and vegetables from our garden, to create a delicious seasonal menu.

Pork Rillette
Cherry & Almond Relish over House-made Cracker Local pasture raised
Mangalista hog is slow cooked in its own juices until it is fall apart tender. The
meat is then whipped with garden herbs. This Rillette is served on top of a house-made
cracker with a Cherry Almond Relish. The cherries have been soaked in our Pinot
Noir wine to mellow the sweetness and bring forward more of the natural fruit aroma.
With pork and pinot being a natural pairing for each other, the combination of the
relish highlights the French Oak barrel aromas in the wine.
Twomey Merlot, Napa Valley, 2006
“Skywalker Ranch” Wagyu-Beef Slider
Fig & Caramelized Onion Jam with Goat Milk Cheddar
More commonly known as Kobe beef, this wagyu beef was pasture raised at George Lucas’s
famous Skywalker Ranch in Marin County. We make petite burgers and serve them on
house-made rolls. Local figs are cooked down with caramelized onions and Pinot Noir
wine. Redwood Hill provides the yummy goats-milk cheddar. The fig & onions provide
an excellent fruit character while the richness of the wagyu beef balances our Merlot.
Silver Oak, Alexander Valley 2007
Foraged Mushroom Bruschetta
Topped with Vella Dry Jack Foraged and locally cultivated mushrooms are
sautéed with herbs and olive oil, and served on a crispy polenta crouton. The forest-floor
aromas complement the earthy, dark-fruit character of our Alexander Valley Cabernet
Sauvignon, while the herbs and lemon give a contrasting pop.
Silver Oak, Napa Valley 2006
5 Year Gouda Cheese
This cheese is simply unrivaled for that perfect balance of salty and sweet. With
its deep caramel in color, crunchy, flaky, and meltingly smooth on the tongue, this
Gouda pairs so well with our Napa Valley Cabernet Sauvignon. This type of cheese
can be found at most artisan cheese markets. When purchasing, you must insist on
one aged for a minimum of 3 years.

The Story behind the Winery
Our Napa Valley winery in Oakville is the home of our Napa Valley Cabernet Sauvignon and the original site of Silver Oak Cellars. Our location, midway between the Silverado Trail and the town of Oakville, provided the inspiration for the Silver Oak name.
A courtyard and fountain, anchored by Silver Oak’s iconic water tower, provide the entrance to the timber-framed tasting room where visitors will find a large stone fireplace, the Glass House Library displaying vintages dating back to the 1970s, a Chai with oak barrels and a History Gallery with memorabilia from our original building. The interior of the tasting room and the exterior of the winery are wrapped in hand-quarried limestone with a chipped face, reclaimed from an 1800s flour mill in Coffeeville, Kansas.
