Join us for a taste of our 2008 Napa Valley and 2008 Alexander Valley Cabernet
Sauvignons. Your tasting includes a complimentary Silver Oak wine glass. When purchasing
a current release wine, $10 of your tasting fee will be applied to your purchase.
This tasting applies to parties of 7 or smaller. For parties of 8 and more, please
refer to Private Tastings.

Our Private Tastings and Tours begin at $30 per person ($240 minimum). With a glass
in hand, guests will be taken on a private guided tour of our winery while tasting
our current release Napa Valley and Alexander Valley Cabernet Sauvignons. Subject
to availability and advance reservations required.

Enjoy a delicious, seasonal food pairing with a tasting of our Alexander Valley
and Napa Valley Cabernet Sauvignons, Twomey Napa Valley Merlot and Twomey Pinot
Noir. Our resident chefs use local ingredients, including herbs
and vegetables from our garden, to create each pairing menu. This tasting is held
in a private room and is limited to eight people.

Experience a vertical tasting of our Napa Valley Cabernet from six different vintages,
beginning with the 2003 and ending with the 2008. This tasting is held in a private
room and is limited to eight people.

Alexander Valley Cabernet Vertical Tasting
Currently Unavailable as our 2003-2008 Alexander Valley Cabernet Sauvignon Collectors are Sold Out. This tasting will be available after the release of our 2009 Alexander Valley Cabernet Sauvignon on August 3, 2013, with the first tasting offered on August 9, 2013.

Experience the red wines that make up our family. Four wines from three varieties
grown in two counties crafted with one goal – to produce delicious, elegant wines
meant to be shared with family and friends. Savor our current releases of our Silver
Oak Alexander Valley and Napa Valley Cabernets followed by Twomey Merlot and finishing
with our Russian River Pinot Noir. While enjoying our wines we’ll show you around
our winery and share our history.
Food and Wine Pairing
Our Silver Wine & Food Pairing gives you the opportunity to use your senses to experience delicious bites with our Silver Oak and Twomey wines. Chef Dominic uses local ingredients, including herbs and vegetables from our garden, to create a delicious seasonal menu.

Asparagus & Quail Egg Bruschetta
Cherry-wood Smoked Bacon & Lemon Aioli
Asparagus is often misunderstood and under used in food & wine pairings. The green
flavor characteristics can overwhelm a wine. However when paired with rich umami
flavored foods like eggs and bacon those same green characteristics take on an herbaceous
aroma that highlight the fruit and oak characters in our Pinot Noir.

Lamb Gyro
Braised Lamb & Tzatziki Sauce
Here is a wine-country twist to a classic Greek-street food. Braised Lamb wrapped
up in our house made flat bread, with creamy tzatziki sauce and garden lettuces.
The rich flavors of braised lamb are able to stand up to the full bodied structure
of Merlot. The creamy tzatziki sauce coats your palate to soften the tannins in
the wine, while the lemon in the garden lettuces highlights the fruit characters
of the wine.

Foraged Mushroom Ragu
Soft Corn Polenta
Arancini are a Sicilian street food of little
rice balls that are traditionally Locally foraged mushrooms are sautéed with shallots,
garden sage, parsley & lemon. The forest-floor aromas compliment the earthy character
of our Alexander Valley Cabernet Sauvignon; while the herb & lemon give a contrasting
pop.

Variety of Preserved Foods
Beef Bresaola, Duck Prosciutto, Goat Gouda, and Oakville Olives
We salted and seasoned a beef eye round, then slow cured it in our curing cellar.
Liberty duck from Petaluma is slow cured in our cellar similarly to the Bresaola.
The Goat gouda comes from Central Coast Creamery. The extended 12 month of aging
give this cheese a higher salt content along with a balanced acid character. Our
olives have been cured by using an ancient Roman method using left-over ash from
our wood oven. The meats and olives all have a balance of protein, salt, fat, and
acidity which make them a natural pairing to Cabernet Sauvignon.

- Continue North on Highway 101 and exit Highway 37 Vallejo/Napa
- Proceed for 7 miles to Highway 121
- Turn left at Highway 121 Sonoma/Napa (Infineon Raceway will be on your left)
- Bear right at the junction for Highway 12
- Continue on Highway 12/121, the Carneros Highway
- Turn left onto Highway 29 heading North towards Napa/Calistoga
- Follow Highway 29 through Napa and Yountville

The Story behind the Winery
Our Napa Valley winery in Oakville is the home of our Napa Valley Cabernet Sauvignon and the original site of Silver Oak Cellars. Our location, midway between the Silverado Trail and the town of Oakville, provided the inspiration for the Silver Oak name.
A courtyard and fountain, anchored by Silver Oak’s iconic water tower, provide the entrance to the timber-framed tasting room where visitors will find a large stone fireplace, the Glass House Library displaying vintages dating back to the 1970s, a Chai with oak barrels and a History Gallery with memorabilia from our original building. The interior of the tasting room and the exterior of the winery are wrapped in hand-quarried limestone with a chipped face, reclaimed from an 1800s flour mill in Coffeeville, Kansas.
