Moroccan Spiced Lamb Sausage

  • 4 garlic cloves, chopped
  • 1 tablespoon olive oil
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground sumac
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon ground coriander
  • 1/8 teaspoon ground allspice
  • 1 pound ground lamb
  1. In a small sauté pan over medium heat, sauté the garlic in the olive oil until soft. Add all of the spices and seasonings. Cook for 60 seconds, stirring constantly. Transfer to a plate and let cool.
  2. Place the ground lamb and the cooled garlic and spices in an electric mixer bowl fitted with the paddle attachment. Mix for 2 minutes.
  3. Crumble the meat into small pieces and place on a baking tray.
  4. Bake at 350°F degrees for 15 minutes, or until the lamb pieces are cooked thoroughly.
